Whether for rolling out buttery pie crust or crushing savory spices, the rolling pin has had a special function in the kitchens of the world for centuries. A baker’s skill is often measured by their flare with a rolling pin. The dough must be mixed just right, not too sticky or too stiff, for rolling just right, not too thick or too thin. And there is always the danger of “overworking” the dough in the process! Yet this humble instrument has not changed much over the years.
